This protein-rich breakfast pizza combines whole-grain crust with a tasty blend of scrambled eggs, low-fat cheese, broccoli, and turkey ham – delivering 10 grams of protein and 1.75 oz eq grain per slice. With familiar pizza flavor and smart nutrition, it’s a warm, satisfying option that supports meal pattern requirements and encourages veggie consumption in a fun, approachable format. Great for breakfast or breakfast-for-lunch service.

Directions

  1. Day before service, blanch broccoli. Place broccoli in a 2" deep perforated pan. Steam for ~1 minute or until bright green. Immediately remove and place in refrigerator.
    CCP: Hold at 41° F or below.
  2. Preheat convection oven to 425° F.            
  3. Chop broccoli into roughly 1/2" pieces.            
  4. Combine broccoli, cheese, eggs, and ham.             
  5. Top each crust with 2 1/2 cups toppings. Spread evenly across pizza.            
  6. Bake for 8-10 minutes or until crust is golden and cheese is melted.
    CCP: Heat to 135° F or higher for at least 15 seconds.
    CCP: Hold and serve at 135° F or higher.
    CCP: No bare hand contact with ready to eat food.
  7. Slice each pizza into 10 slices. Serve one slice to each student.
